Welcome

I have been gardening since 2007 and have expanded my variety of herbs and veg each year. This 2010 season will bring lots of new smells and taste into my garden, home, and hopefully bring lots of surprises for my friends and neighbors who appreciate fresh garden goodies!

Tomato, Chickpea, and Avocado Salad with Mint and Horseradish Leaf!

Very simple and delicious salad that went with my dinner on Sunday night!

2 fresh Tomotoes cubed.
1 Cup Chickpeas (I rehydrate dried chickpeas and cook them until tender, but canned is fine)
1 Avocado cubed
2 Tbsp Balsamic Vinegar
1 Tbsp brown sugar
10 mint leaves (I used Peppermint this time) chopped up ( does not have to be a fine chop)
2 Leaves from the Horseradish plant chopped up (does not have to be a fine chop)

It was a very fresh tasting salad that popped with the mint and had a great hint of bitter with the Horseradish and Balsamic!

Try it and enjoy, let me know if you need some Mint, Horseradish, and soon some Tomatoes from the garden for this recipe!!!

Did some weeding today and really enjoyed pinning up my tomatoes and pickle plants! Can't wait for the results which are about 2 weeks away from the first pickings!

Loving the Garden! Michael.
